Jeremy Fox is a familiar name on the food scene, both local and national, and he’s about to embark on a new side project.

He’s inked a deal for a vegetable cookbook with Phaidon Press (they also did Noma and A Day at elBulli), and he’s cutting no corners with neither the book nor the produce he’ll use for it. He’s teamed up with Ryan Hill and Peter Jacobsen (see their roles below). Together, they’ll all put on a series of pop-up dinners, centered around recipe testing for the book.

Hill is the proprietor of Hill Family Estate Winery in Yountville, a property that also includes a private orchard and garden that will play prominently in the book and the dinners. He’ll obviously take care of wine pairings.

Jacobsen and Fox will collaborate on the aforementioned farm angle. For those unaware, Jacobsen is the man behind Jacobsen Orchards, an exclusive produce provider to the French Laundry and the Thomas Keller Restaurant Group. So, between Jacobsen, Fox and Hill, you’ve got the spectrum of farming, cooking, and winemaking. Also cool is that the photography is being done by Eli Woolery, a fellow with a background in underwater photography.

The book has a working title of Seed to Stalk: A Modern Culinary Handbook; feast your eyes on the preliminary website here.

Regarding the dinner dates and further details, well, you’ll just have to stay tuned.
